    Sharpening Angles Explained:

    Grit Levels Explained:

    • #240, #400, #600, #1000, #5000: Progressively refine your knife's edge from rough to smooth. A lower number means rougher grit, while a higher number means smoother.

    How to Attach and Use Your HoneyHone™ Knife Sharpener

    Attaching the Knife:

    Attach the knife to the magnetic angle guide, choosing the appropriate angle for your task (12°, 15°, 18°, 20°, or 22°). The magnets will hold the knife securely at the selected angle. Ensure the blade is positioned evenly on both sides of the sharpener for consistent results.

    Sharpening Process:

    Starting Fresh (For Extremely Dull Knives or Angle Changes):
    1. Start with the #240 grit roller. Sharpen one side of the knife by rolling the sharpener back and forth until you feel a burr forming on the edge. This indicates that you've sharpened enough.
    2. Flip the knife and repeat on the other side.
    3. Progress through the #400, #600, and #1000 grits, repeating the same process. This will progressively refine the edge to a smoother finish.
    4. Finish with the #5000 grit polish stone. Make 10-30 passes on each side to create a mirror-like edge.
    5. Finally, use the leather strop with a few passes on each side to remove any micro-scratches and achieve a razor-sharp finish.
    Just Touch Up (For a Quick Edge Refresh):
    1. Use the #1000 grit roller for 10-20 passes on each side to maintain the edge.
    2. Polish with the #5000 grit, making 10-30 passes per side.
    3. Finish with a few passes on the leather strop to finalize the edge.
